Banana Cake

Diane made this cake for her brother Real’s 82 Birthday. She was taking it to St. Norbert so I did not get to taste it but it sure looked good! Don’t you agree?

- 8 tbsp butter (1 stick), room temperature
- 3/4 cup sugar
- 2 eggs
- 1 cup all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup whole wheat flour
- 3 large ripe bananas, mashed
- 1 tsp vanilla
- 1/2 chopped walnuts
Preheat oven to 350 F.
Cream butter and sugar together until light and fluffy. Add eggs one at a time, beating well after each addition. Set aside.
In a separate bowl, sift all purpose flour, baking soda and salt together. Stir in whole wheat flour and add to creamed mixture, mixing well.
Fold in bananas, vanilla and walnuts.
Pour mixture into greased cake pan, and bake for 50-60 minutes or until cake tester comes out clean.
Cool in pan for 10 minutes, then on rack for about 30 minutes. As frosting as desired.
