- 1 1/2 cups whole brazil nuts
- 1 1/2 cups whole pecans
- 1 cup chopped dates
- 1/2 cup whole red cherries
- 1/2 cup whole green cherries
- 1 candied pineapple ring, sliced
- 1/2 - 3/4 cup sugar
- 3/4 cup flour
- 1/4 tsp baking soda
- 3 eggs
- 1 tsp vanilla
Preheat oven to 275 F if using a Pyrex baking pan, or 300 F if using a metal baking pan.
Mix together fruits and nuts.
Sift together sugar, flour and baking soda and pour over fruit and nut mixture.
Beat together eggs and vanilla and fold into mixture.
Bake in loaf pan for 1 1/2 - 2 hours.
