Easy Fried Rice

Equipment
- 1 large pan suitable for frying
Ingredients
- 4 cups cooked rice (leftover rice is a key)
- 2 eggs, whisked
- 2 carrots, peeled and diced
- 1/2 cup frozen peas
- 2 sausages, grilled and diced
- 2 pieces of barbecued chicken or pork, diced
- 3 cloves garlic, minced
- 3 green onions, thinly sliced
- 3 tbsp soy sauce
- salt, sugar and black pepper to taste
- 3 tbsp cooking oil
Instructions
- Heat a large pan until very hot, about 2 minutes, add 1 tablespoon cooking oil
- Beat eggs with 2 teaspoons water, stirring to form large curds, about 30 seconds. Transfer to a plate and cut into slices
- Continue to heat the pan with 2 tablespoons cooking oil, add minced garlic until light brown. Add carrots, peas and cook, about 2 minutes.
- Add rice, diced sausages, diced chicken/pork stirring about 3 minutes until heated through. Season with salt, sugar, pepper and soy sauce. Stir in the remaining green onions.
