  • 1 9 x 5 inch baking pan

Ingredients
  

  • 1 1/2 cups whole brazil nuts
  • 1 1/2 cups whole pecans
  • 1 cup chopped dates
  • 1/2 cup whole red cherries
  • 1/2 cup whole green cherries
  • 1 candied pineapple ring, sliced
  • 1/2 - 3/4 cup sugar
  • 3/4 cup flour
  • 1/4 tsp baking soda
  • 3 eggs
  • 1 tsp vanilla

Instructions
 

  • Preheat oven to 275 F if using a Pyrex baking pan, or 300 F if using a metal baking pan.
  • Mix together fruits and nuts.
  • Sift together sugar, flour and baking soda and pour over fruit and nut mixture.
  • Beat together eggs and vanilla and fold into mixture.
  • Bake in loaf pan for 1 1/2 - 2 hours.
