Banana Cake

Diane made this cake for her brother Real’s 82 Birthday. She was taking it to St. Norbert so I did not get to taste it but it sure looked good! Don’t you agree?

  • 1 9 inch round baking pan

Ingredients
  

  • 8 tbsp butter (1 stick), room temperature
  • 3/4 cup sugar
  • 2 eggs
  • 1 cup all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup whole wheat flour
  • 3 large ripe bananas, mashed
  • 1 tsp vanilla
  • 1/2 chopped walnuts

Instructions
 

  • Preheat oven to 350 F.
  • Cream butter and sugar together until light and fluffy. Add eggs one at a time, beating well after each addition. Set aside.
  • In a separate bowl, sift all purpose flour, baking soda and salt together. Stir in whole wheat flour and add to creamed mixture, mixing well.
  • Fold in bananas, vanilla and walnuts.
  • Pour mixture into greased cake pan, and bake for 50-60 minutes or until cake tester comes out clean.
  • Cool in pan for 10 minutes, then on rack for about 30 minutes. As frosting as desired.
