Banana Cake
Sister Diane BelisleDiane made this cake for her brother Real’s 82 Birthday. She was taking it to St. Norbert so I did not get to taste it but it sure looked good! Don’t you agree?

- 1 9 inch round baking pan
Ingredients
- 8 tbsp butter (1 stick), room temperature
- 3/4 cup sugar
- 2 eggs
- 1 cup all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup whole wheat flour
- 3 large ripe bananas, mashed
- 1 tsp vanilla
- 1/2 chopped walnuts
Instructions
- Preheat oven to 350 F.
- Cream butter and sugar together until light and fluffy. Add eggs one at a time, beating well after each addition. Set aside.
- In a separate bowl, sift all purpose flour, baking soda and salt together. Stir in whole wheat flour and add to creamed mixture, mixing well.
- Fold in bananas, vanilla and walnuts.
- Pour mixture into greased cake pan, and bake for 50-60 minutes or until cake tester comes out clean.
- Cool in pan for 10 minutes, then on rack for about 30 minutes. As frosting as desired.
