Ingredients
  

Salad

  • 1 cup broccoli
  • 1 cup turnips or rutabaga
  • 1 cup cauliflower
  • 1 cup carrots
  • 1/2 cup celery
  • 1/2 cup green peppers
  • 1 cup canned chick peas, drained and rinsed
  • 1 cup canned kidney beans, drained and rinsed
  • 1 cup cherry tomatoes
  • finely chopped onions, to taste
  • 1-2 boiled eggs, sliced (optional)

Marinade

  • 1/2 cup vinegar
  • 1/3 cup sugar
  • 1/4 cup salad oil
  • 2 tbsp. curry powder
  • 1 tsp. salt
  • ¼ tsp. pepper

Instructions
 

  • Slice all vegetables into bit sized pieces.
  • Mix and shake marinade ingredients.
  • Steam all vegetables to a crisp except the onions and tomatoes.
  • Combine steamed vegetables, beans and marinade and lightly mix.
  • Add onions, cherry tomatoes and sliced boiled eggs, if desired.
  • Chill at least 30 minutes before serving.
