Ingredients
Salad
- 1 cup broccoli
- 1 cup turnips or rutabaga
- 1 cup cauliflower
- 1 cup carrots
- 1/2 cup celery
- 1/2 cup green peppers
- 1 cup canned chick peas, drained and rinsed
- 1 cup canned kidney beans, drained and rinsed
- 1 cup cherry tomatoes
- finely chopped onions, to taste
- 1-2 boiled eggs, sliced (optional)
Marinade
- 1/2 cup vinegar
- 1/3 cup sugar
- 1/4 cup salad oil
- 2 tbsp. curry powder
- 1 tsp. salt
- ¼ tsp. pepper
Instructions
- Slice all vegetables into bit sized pieces.
- Mix and shake marinade ingredients.
- Steam all vegetables to a crisp except the onions and tomatoes.
- Combine steamed vegetables, beans and marinade and lightly mix.
- Add onions, cherry tomatoes and sliced boiled eggs, if desired.
- Chill at least 30 minutes before serving.
