Almond Puff

Hilda received this recipe from Penny Forrest when they taught together. It seems rather fussy to make but Hilda got it all together and it is well worth the effort. Very tasty!! Make some more!

Equipment

  • 1 ungreased baking sheet
  • 1 medium saucepan

Ingredients
  

First Layer

  • 1/2 cup soft margarine
  • 1 cup flour
  • 2 tbsp water

Second Layer

  • 1/2 cup margarine
  • 1 cup water
  • 1 cup flour
  • 1 tsp almond extract
  • 3 eggs

Glaze

  • 1 cup icing sugar
  • 1 1/2 tbsp soft margarine
  • 1 tsp almond extract
  • 1-2 tbsp warm water
  • 1/2 - 1 cup roasted, slivered or chopped almonds 

Instructions
 

  • First Layer: Cut ½ cup margarine in 1 cup of flour. Sprinkle 2 tbsp. of water over it.
  • Mix with fork, round into a ball and divide in half.
  • Place on ungreased baking sheet and pat each half into a strip 12" x 3".
  • Second Layer: Beat eggs until smooth. Set aside.
  • In medium saucepan, heat ½ cup margarine and 1 cup water to rolling boil.
  • Remove and quickly stir in extract and 1 cup of flour. Stir vigorously over low heat till mixture forms a ball (about 1 minute). Remove from heat.
  • Beat in eggs until smooth.
  • Divide in half and spread evenly over both strips, covering completely.
  • Bake at 350 F for 60 minutes.
  • Cool and glaze. Sprinkle with chopped and toasted almonds.
