Pickled Red Onions

Pickled Red Onions is the traditional side dish served with Chung cake, pork pie or spring rolls for the Lunar New Year meals in Vietnam. I learned this recipe from my mum. It is very simple to have a jar of pickled onions.

Equipment

  • 1 clean glass jar large enough to contain 1 kg of onions

Ingredients
  

  • 1 kg small red onions
  • 0.5 kg sugar
  • 5 tsp sea salt

Instructions
 

  • Soak red onions with salty water for two hours to dispel to the strong smell of onions.
  • Peel the onions, wash and dry them for a while.
  • Mix sugar with red onions, shake well and then put them into the clean jar.
  • Close the jar and put indoors or leave it in the sun for three weeks.
  • Now it is ready to enjoy. It tastes sour and sweet which flavor the main dishes of traditional meals on the first days of New Year. Happy Lunar New Year and Enjoy!
