Garlic Clove Chicken

Cecile is well known for this recipe by her family and now by her Sisters. The garlic just melts in your mouth flavoured by the maple syrup and the chicken is yummy!

Equipment

  • 1 large oven safe pan or casserole dish

Ingredients
  

  • 1 whole chicken, cut up
  • 3 whole buds of garlic
  • 4 tbsp butter or margarine
  • 3/4 cup maple syrup
  • 1/2 tsp salt
  • 4 potatoes

Instructions
 

  • Preheat oven to 400F.
  • Cut up chicken.
  • Separate the garlic cloves without peeling, making about 24 cloves.
  • Melt butter or margarine in a large pan in the oven.
  • Remove pan from oven, add chicken pieces and garlic. Stir to coat with butter.
  • Bake uncovered, basting occasionally for 30 minutes.
  • Combine maple syrup and salt and pour over the chicken. Bake another 15-20 minutes.
  • Microwave the potatoes for 5 min, or roast them ahead of time. Partly cooked potatoes can be placed with the chicken when the sauce is added.
  • Serve with asparagus or broccoli.
