Equipment

  • 1 frying pan
  • 1 medium pot

Ingredients
  

  • 1 chicken or 6 boneless thighs
  • 1/2 cup vinegar
  • 1 clove of garlic, chopped
  • 1 clove of ginger, chopped
  • 1 bay leaf
  • 1 3/4 cups water
  • 1/4 cup light soy sauce
  • salt and pepper to taste
  • oil for frying
  • chunky pineapple cubes (optional)
  • bell peppers (optional)

Instructions
 

  • Fry the chicken pieces lightly in oil.
  • Place chicken in pot, all all other ingredients and bring to a boil.
  • Reduce heat and simmer until chicken is cooked, about 35 - 40 minutes.
  • Chunky pineapple cubes or bell peppers may be added if desired.
  • Serve over rice.
